A virgin olive oil has not undergone any chemical treatment or processing. It is obtained by mechanically (or another physical means) pressing the olives, and its basic properties are not modified. Itís a totally natural product that maintains the same biological and chemical properties of the olive, having not gone through any artificial processes. There are many classifications of Virgin Olive Oil depending on their taste, smell, and analytic characteristics. When we talk about acidity, we talk about the proportion of free fatty acids- not an acidic flavor.

Olive OilExtra Virgin Olive Oil
The best olive oil on the market with an acidity level anywhere up to 0.8 grams per 100 grams (0.8%). It's most commonly used on salads and added to soups and stews. Itís a popular dip for breads with a splash of balsamic vinegar.

Virgin Olive Oil
Virgin olive oil with a good taste that has a free acidity of 2% or 2.0 grams per 100. Similarly, it is used for salads, soups, stews, and dipping bread.

Virgin olive oil is, regardless of its quality level, a natural product, which has not had its characteristics altered, has been extracted naturally, without chemicals or other processing and with heat during pressing that doesn't exceed 33 Celsius.

Gourmet Olive OilTo produce the highest quality olive oil, olives must be handpicked one by one. They should never touch the ground and once picked must be taken to an olive press immediately.

Many growers store their olives for a while before pressing. This means fermentation and the taste is compromised. Some farmers also grows all of its own herbs and spices and even have their own water supply on the premises.

These methods of extraction gives the oil unmatched nutritious qualities. Beyond being a food, it becomes medicinal with its high contents of natural E, A, B and D vitamins, karoten, anti-oxidants, squalin and oleuropeine and has been used by villagers to treat skin ailments and stomach problems for hundreds of years.

    Refined Olive Oil and  Pure Olive Oil
    Refined Olive Oil is not totally natural, though perfectly healthy. They are obtained by refining virgin olive oils that do not pass the taste or free acidity test. No solvents are used, as refined olive oils have filtered with charcoal or other chemical filters. Because it must go through processing, itís not considered "virgin olive oil," though it's kind of like the equivalent of virgin olive oil (that just needed a little bit of help getting there). It doesn't have the same good taste of virgin olive oil.

    Pure Olive Oil is now simply called olive oil and is a blend of virgin olive oil and refined olive oil. Its label will bear the designation "pure" or "100% pure". However, refined olive oil has very little vitamin E content. This is why producers need to add unrefined virgin olive oil to impart some of flavor, color and aroma into the blend. The proportions of the two components may vary from one producer to another, depending on the flavor the producer desires to create. Pure olive oil actually has the same acidity level as virgin olive oil, and for that reason it has good resistance to high temperatures. Its lower nutrient content than virgin olive oil makes it less expensive. It cannot be used for dressings and is better suited for heavy - duty, high-heat cooking.
